Are companies allowed to replace variable "N" with actual year? Therefore instead of having N, N-1, N-2,...in development triangles we are going to fill (in this year SFCR) 2016, 2015, 2014, ....

Yes, you should replace the variable „N" with actual year in the development triangles of S.19.01.21.
The principle is to follow the templates as it is important to facilitate comparability between companies but adaptations for visual purposes should be allowed.
